I use organic flours and quality ingredients in every bake. I found that a mix of spelt flour gives my crumb chew to the texture while the ap flour keeps it light and soft. My sourdoughs are crafted slowly and by hand, just the way bread should be. Each loaf is made locally to order right here in Ventura.
